Pale-golden white balsamic comes from the same grapes as the dark stuff, but is cooked and aged to a lesser extent. The flavor is milder, brighter and sweeter, though by no means any less compelling. Its neutral, sweet-tart acidity is ideal for all manner of dressings, and the pale color won’t darken light-colored foods. This high-grade example is significantly more complex than any supermarket brands that we have tried.
